Christmas Muesli - but you can make it anytime 😊

I have had many requests for the recipe for the Christmas Muesli I make for my yogis every year. It is super easy, simple to scale up or down, and a great way to use up all the leftover bits of nuts and seeds lurking in the pantry (side note - I only do this for my own! I buy fresh ingredients when gifting). The total quantity below is enough for around 20 serves if you are conservative. I'm not because it is delicious and life is short! Enjoy with yoghurt, or sprinkled over fresh fruit for some crunch 🫐

2 cups of rolled oats

1 cup puffed brown rice

1 cup quinoa puffs

1 cup buckwheat puffs

1/2 cup sunflower seeds

1/2 cup pepitas

1 cup chopped almonds

1/2 cup pecans

1/2 cup cashews

1/4 cup pistachios

Pinch salt

A sprinkle of nutmeg

1/2 cup coconut flakes

1/4 cup cranberries

1/4 cup coconut oil

1/4 cup maple syrup

1/4 cup honey

2 teaspoons vanilla paste

Preheat oven to 160 or so. Mix all the ingredients up to the nutmeg in a big bowl. Mix the coconut oil, vanilla, honey and maple syrup in a saucepan, heat for a few minutes on low heat, then pour over the mixture, give it a good stir so everything is well coated. Line a large roasting dish with baking paper and spread out the mixture. Pop it in the oven for around 30 minutes, stirring every 10 minutes or so. Keep an eye on it so it doesn’t burn! When it looks almost done, add the coconut flakes, these only take about 5 minutes and can burn quickly. Take it out when it is toasty enough for your liking and stir through the cranberries.

Use whatever nuts, seeds and dried fruit you have. To make it gluten free just omit the oats. This also makes for a lighter, puffier batch. Leave out whatever you don't like and replace it with something else. Can try more or less of the oil/honey/maple mix, or can use butter in place of the coconut oil.

This makes around 6 x 500ml jars of muesli 🫙

Let me know how you go!
